Nutty Man Cookie

A crunchy, chewy cookie, combing three beloved classics- -simple to make, pretty on the plate, and perfect with coffee or tea.

Ingredients

  • 115 gramm of brown sugar
  • 150 gramm of white sugar
  • 115 gramm of butter
  • 1 egg
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/3 tsp baking soda
  • 1/2 tsp salt
  • 8 Shortbread cookies, crushed (about 1 cup)
  • 10 Oreo cookies, crushed (about 1 cup)
  • 100 gramm of chocolate chips(Or as many as you see fit)
For a lighter vegan version, swap the egg with a flaxseed or chia seed mixture and opt for a plant-based butter.

Instructions

  1. Melt the butter gently and let it cool slightly for about 10 minutes.
  2. In a large bowl, whisk together the sugars and butter until light and fluffy.
  3. Beat in the egg and vanilla extract.
  4. In a separate bowl, combine the flour, baking soda, and salt.
  5. Gradually add the dry ingredients (flour-mixture) to the wet ingredients (sugar-butter mixture), mixing until just combined.
  6. Gently fold in the crushed cookies and chocolate chips.
  7. Drop rounded tablespoons of dough onto ungreased baking sheets.
  8. Preheat the oven to 170°C (350°F).
  9. Bake for 10-12 minutes, or until golden brown.
  10. For a uniformly look and softer texture, press down the dough balls slightly before baking.
  11. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
